Rustic Kabab Chini Mushroom Masala
A bold, earthy dish with the rich complexity of tailed pepper — aka Kabab Chini.
🌿 Ingredients:
- 200g button mushrooms, halved
- 1 large onion, sliced
- 2 tomatoes, chopped
- 1 tsp ginger-garlic paste
- 1 tsp oil + 1 tsp ghee
- 1 tsp cumin seeds
- 3 Kabab Chini (Tailed Pepper) – lightly crushed
- 1 small Cinnamon Stick (Dalchini)
- Salt to taste
- ½ tsp red chili powder
- ½ tsp garam masala (optional)
🥄 Instructions:
- Heat oil + ghee in a pan, add cumin, cinnamon stick, and crushed kabab chini.
- Sauté onions until golden brown.
- Add ginger-garlic paste and stir till fragrant.
- Add tomatoes, salt, and red chili powder. Cook until tomatoes soften.
- Add mushrooms and toss well. Cook covered for 5–6 mins until tender.
- Sprinkle garam masala and serve hot with rice or roti.
